Ever tried a Ben’s Cookie – fallin in love at first bite? If you haven’t, you are missing out! Try these now at home! They are fantastic, if a tad unhealthy!
Ben’s Quad Chocolate Cookies
Servings: 12 Cookies – depending on size
Those who have ever been to Ben's Cookies (I've visited one in Bath and one in London) will know how opulent these chocolate cookies are. I have definitely taken inspiration from these outings, and have upgraded it to Quad Chocolate – please dont judge me!

Ingredients
- 200 g Unsalted butter
- 300 g Caster sugar
- 1 Large egg
- 275 g Self-raising flour
- 75 g Cocoa powder
- 200 g White chocolate
- 200 g Milk chocolate
- 200 g Dark chocolate
- 150 g Caramel chocolate buttons
- 1 splash Milk
Instructions
- Soften butter (use microwave if necessary) and combine with sugar in a large mixing bowl until creamed
- Add in the egg and mix.
- Add all the other ingredients – no need to sieve the flour or cocoa, just dump it all in. Break the chocolate bars into smaller pieces (cubes or triangles or whatever it comes out as).
- Mix the mess – if its too dry, add a dash of milk.
- Place baking parchment onto 2 large baking trays.
- Roll mixture into 12 even-ish balls and put 6 per tray – make sure they have enough room to spread.
- Pop in a preheated fan oven at 200C for 10 minutes.
- Take them out – wait 30 mins or so until they cool and set! Enjoy and then book in time at the gym!
